Sometimes, the best love stories begin long before you realise it. For Erinn and Corey, it started with six years of knowing of each other, before one Instagram story finally brought them together. From that first spark, their story unfolded naturally, leading to a proposal filled with family, nerves and a moment that was worth waiting for.
Tell us a little about how you met & talk us through the proposal
We met six years ago, always aware of each other, but it wasn’t until social media brought us together that things really began. One day, Erinn posted a story on Instagram that caught Corey’s attention—and the rest is history. Corey had originally planned to propose during a trip to Edinburgh in February 2025. He even had the ring with him, but nerves got the better of him and he decided to wait for the right moment. When Erinn’s big sister was about to return to Australia after spending a month at home, Corey knew it was time. The night before she left, he got down on one knee in their living room and asked the big question.

Why Roe Valley Resort?
We chose Roe Valley because we instantly loved the setting—it just felt right for us. We’d also heard great reviews about the food, which was especially important considering the calibre of guests we were inviting (farmers, so standards are high!). When we visited, the staff were so welcoming and relaxed, and we really appreciated that there was no pressure to make a decision. The packages they offered also covered everything we were looking for, which made the choice even easier.
Tell us the most memorable part of your day
The most memorable part of our day was truly everything—the service, the food, and the incredible staff all made it so special. One moment that really stood out was being introduced as Mr and Mrs Mitchell for the first time. Sitting at the top table and looking out at all our family and friends celebrating with us was something we’ll never forget.

For the finer details, Fairy Tales took care of the LED letters, some of the table centrepieces, and the photobooth. Milson and Berry provided the flowers, which added a beautiful touch to the day. The bride also designed and created all of the stationery herself, including the table names and place settings, making it all the more personal and special.

Tell us about the entertainment you had on the day.
For entertainment, Tamara from Pencil and Paint provided something really unique, creating live illustrations of our guests throughout the day. In the evening, we had Colin Graham as our live singer, followed by DJ Brian McKay, who kept everyone on the dance floor.
