Tell us a little about your journey at Roe Valley Resort leading up to your new role with Galgorm Collection
I started my journey at Roe Valley Resort back in 2015 as a F&B Assistant moving on to Restaurant Supervisor then Assistant Manager in The Coach House. Next, I participated in a hotel management programme working through all departments of Roe Valley Resort and trained as a Duty Manager. When accquired by Galgorm Collection, I had the opportunity to work in McKendry's Bar at Galgorm Resort as an Assistant Manager before returning to Roe Valley in June for the opening of the new Fratelli restaurant as Restaurant Operations Manager.
Fratelli is a new addition to the resort, how were you involved in the planning stages leading up to its grand opening?
Being involved in the opening of a new restaurant was a totally new experience for me but one I really enjoyed. From the operational planning such as arranging our front of house team and organising drinks and cocktail menus to the busyness of the all the preparations leading up to opening night where we welcomed media, community groups and influencers before opening to the public the next day, it was certainly a time to remember!
What do you enjoy most about your new role so far?
What I enjoy most about my new role is getting the opportunity to be a key part of Galgorm's first development phase at Roe Valley Resort with the opening of their much loved Fratelli restaurant. Learning a completely new style of food, having the chance to put my own stamp on things and being able to pass on my previous experience to the rest of the team is something I've been enjoying and continue to look forward to.
